Edition 05 draws from the orchards of Normandy's interior — not the coast's celebrated butter and cream, but the fermenting cellars, wild hedgerows, and autumn preservation that define the inland kitchen. The menu follows the logic of a harvest: bright and acidic at its opening, earthy and resonant by the plat, resolved into deep sweetness by the close.

Sourcing this edition: Ferme du Valdieu in Orne for the venison, Maison Guérin in Mortagne for the aged Comté, and a single orchard in Putanges-le-Lac for the pressed apple base of our welcome drink. Nothing arrives from more than 180 kilometres away.

Edition 05 came together later than most. I spent August in the Orne, eating badly and driving poorly and eventually finding the right farm.

The venison we're serving has been hanging for 21 days. I tasted the Comté last week and it made me change the dessert. Every edition I make a promise to myself to serve fewer courses than the last one. I've kept it exactly once.
